You often hear that healthy food is expensive. Stanley Tucci has a series on CNN called “Searching for Italy.” It is an interesting exploration of that European country and it is very entertaining, but it is practical too. Part of the program is devoted to cooking authentic Italian food. Many Italians were poor when these recipes were developed and so the ingredients are inexpensive and the end result is delicious. This program shows you how to prepare these healthy dishes that are a great example of the Mediterranean diet.
When we think of Italian food we think of pizza and pasta made from white flour. That is not so healthy, but real Italian food can lead to a longer, healthier life. In this video, Stanley is showing you how to make a sofrito, which is the base for many Italian dishes. The extra virgin olive oil used to sauté the carrots, onions, and celery—unlike other fats—is almost like a medicine. It has antioxidant and anti-inflammatory properties that lower your risk of heart disease and cancer. Stanley’s program is on its third season and there are many examples of great meals that don’t cost a lot.
Everyone knows what you should not eat but you are not getting great information on what you can eat. The Mediterranean diet may be the most healthy and for good reason. It emphasizes extra virgin olive oil (straight from the press) and increases your vegetable intake. Stanley teaches you how make this food and it is not that hard.
I like good food and I like to cook. I make Stanley’s sofrito pretty often. I cut up the inexpensive carrots, celery, and onions while I am watching the news and put it in a plastic bag. The next day, I just put the vegetables in a pot, put in some olive oil, add some Italian seasoning, stir and cook on low heat. As the vegetables get softer, I use a spatula to chop them a little finer. I can go do other things without worrying that it will burn. I just stir it occasionally. Then I add liquid. You can add chicken, turkey, or seafood. I often add lentils or other beans to give it more substance. Whole wheat penne pasta works too.
This food is inexpensive, delicious, and it sticks to your ribs. That is one way many more of us can eat a healthy diet.
